Coffee or tea is always on early! Juice is poured as the first course is presented - cereal and yogurt are typically available.

Start with a 'Curried Fruit Bake', a pleasant blend of sweet and hot, then 'Overnight Oven French Toast' and maple syrup with eggs, ham or bacon.

Curried Fruit Bake: Mix 1 C brown sugar with 1 1/2 tsp curry, 1/2 C Peach juice and pinch of salt. Add 2-3, 14 oz cans of Peaches, drained - stir to blend. Bake covered in 350 oven for 25 minutes.

Overnight Oven French Toast: Mix 4 large eggs with 1 tbsp flour, 3 tbsp brown sugar, 1/4 tsp cinnamon, 1/8 tsp ground allspice and 1/2 tsp baking powder. Mix well and add 1 C milk with 1/2 tsp vanilla. Arrange 6, 1 inch bread slices in well-greased 9x13 pan and pour mixture over top, cover and refrigerate overnight. In the morning, uncover and bake in 425 oven for 15 minutes until browned.


Good 'for you' morning!

Join us in the big kitchen! Nibble at some cereal(hot or cold) while we visit and get the main 'attraction' prepared. Hotcakes served with hot, homemade blueberry or an orange marmalade sauce, poached eggs and crisp bacon or ham slices on the side. Save the fruit and yogurt for dessert!

Blueberry Sauce: In saucepan, mix 1/2 C sugar with 1 Tbsp cornstarch. Add 1 C water, juice and grated rind of 1 orange and 1 C blueberries. Cook over medium heat until sauce is thickened. Serve warm.

Orange Marmalade Sauce: Mix marmalade and equal amount of honey and heat in microwave until consistency of syrup.


Broiled Grapefruit Halves with Ginger Marmalade

Grapefruit, halved 2; Ginger Marmalade 3 tbsp; Ginger liqueur 3 tbsp; Cornstarch 3/4 tsp; Maraschino cherries 4.

Cut around grapefruit sections. Stir marmalade, liqueur and cornstarch together - spread over halves. Place grapefruit on broiler tray. Top each with cherry in centre. Broil 3-4 inches from heat for about 3 minutes or until bubbling.


Rancher's Breakfast

We've brewed up a big pot of coffee or you are welcome to sample some herbal teas from our local shop. Come join us in the kitchen to watch the landscape awaken and enjoy the smells coming from the kitchen - there's always time for a visit. Deb's making her Vegetable Oven Frittata with Hash brown Casserole, sliced locally-grown tomatoes, sausages and toast. Sometimes Tony makes a batch of hotcakes too.

You will never leave the table hungry!

Frittata: Preheat oven to 375. Melt butter in ovenproof frypan and saute preferred selection of vegetables (onion, peppers, mushrooms and spinach). Whisk 6 large eggs with 1/2 C cream and 1/4 tsp salt with sprinkle of pepper. Add 1/2 C grated cheese and pour egg mixture over vegetables in pan and stir gently to mix evenly. Continue heating on stove, periodically lifting edges to ensure bottom is firm. Top with tomato slices and add a dash of parmesan cheese (optional). Bake for 10-15 minutes until browned and centre is set. Cut into wedges and serve.
