When we first set up Jim thought no-one will stay more than three days; so he had three recipes. Within a month we had folks stay for a week. So friend Stevie, who can make a meal with a twig and a leaf, was called and this is one of his recipes. Not his original but a favourite:
Ingredients: 4 eggs, 1/3 cup blend, 1 1/2 cups shredded Swiss cheese, 10 oz (300g) package frozen chopped spinach (cooked and drained), 4 slices crisp cooked and crumbled bacon, 1 tsp lemon juice, 1/2 tsp salt.
In a medium bowl beat eggs and blend until light and fluffy. Blend in cheese, spinach, bacon, lemon juice and salt. Pour in lightly greased quiche dish, cover with plastic wrap and heat in microwave on medium for ~ 10 minutes. Let stand for 5 minutes.
