Blueberry Strudel French Toast
1 loaf bread, 6 extra large eggs, 1 cup milk, 1 cup whipping cream, 2 Tsps. vanilla, 2 Tbsps. cinnamon, 1/2 Tsp. nutmeg
1/4 cup melted butter, 1/4 cup brown sugar, 1 Tbsp. corn syrup, 1/2 cup walnuts or pecans, 1/4 cup whole flax seed
1 cup cran-grape juice, 1/2 cup sugar, 4 cups fresh blueberries, 2 tbsps. cornstarch, juice of one lemon
The night before, cut bread in cubes Whisk eggs, milk, cream, vanilla, cinnamon, and nutmeg Pour over bread cubes. Cover with plastic and refrigerate overnight.
Next morning, preheat oven to 350 degrees, coat a 9 1/3 x 13 inch dish with a non-stick spray. Pour bread mixture into pan.
Melt butter, add brown sugar, corn syrup and nuts in saucepan. Pour strudel topping over French toast. Sprinkle with flax seed. Bake 45 minutes. Let stand 5 - 10 minutes before cutting.
Serve with maple syrup or blueberry sauce.
Whisk juice and cornstarch in saucepan, add berries, sugar and lemon juice. Bring to a boil over med. hear, stirring constantly. boil for 5 minutes or until sauce thickens. ( freezes well).
Baked Apple Sausage Casserole
3 maple sausages, 3 apples peeled and sliced, 1/2 Tbsp. lemon juice, 2 - 3 Tbsps. brown sugar, 1/4 cup raisins, salt, pepper & cinnamon,
slice sausage into bite-size pieces. Brown sausage, drain thoroughly. Mix all ingredients and place in a buttered casserole. Cover and bake at 350 degrees for 30 minutes. Serves 3 - 4.
Serve with scrambled eggs.
1 1/2 fresh pear or apple, cored and sliced, 2 Tbps. lemon juice, 1/4 cup sugar. Combine above ingredients and set aside.
Melt 2 Tbsps butter in ovenproof pan--arrange above fruit and cook on stove top.
2/3 cup yoghurt, 2 eggs, 2/3 cup clour, 3 Tbsps. sugar, 1 Tbsp. melted butter, 1 tsp. baking powder, 1/2 Tsp. baking soda, 1/4 Tsp. salt
Combine wet and dry ingredients until mixed. pour over cooked apples. Bake @ 400 degrees for 15 minutes. FLIP onto plate. Serve with ham or bacon and a medley of fresh fruit, tea or coffee, or
