Farmer's Breakfast

3 cups frozen hashbrowns, 1 cup chopped ham, green onion - cut with scissors, 1 cup shredded cheddar cheese, Combine these first four things and put in greased dish

4 or 5 eggs, 1 can evaporated milk ( 1 3/4 cup), Salt and pepper Beat together and pour over the cheese mixture

Sprinkle with Parmesan cheese

(Place in fridge overnight to soak)

Bake for 40 - 45 minutes @350


Blueberry Muffins

1 cup blueberries 2 Tablespoons sugar } Combine and set aside

STIR TOGETHER: 2 cups flour 1/3 cup sugar 2 teaspoons baking powder 1/2 teaspoon salt

CUT IN BUTTER UNTIL CRUMBLY 1/2 cup butter

STIR IN JUST TIL MOIST: 3/4 cup orange juice 1 egg slightly beaten

Fold in Blueberry mixture

Spoon in greased muffin pans Bake 20 - 25 minutes - 400 - til golden brown


Cinnamon Rolls

2 cups Flour, 4 tsp. baking Powder, 4 Tbs. sugar, salt, Mix these first 4 ingredients, Cut in 1 square butter (1/2 cup) until crumbly, ADD 1 cup milk and 1 egg combined to the flour mixture,

Roll out dough into a rectangle and butter it. On top of the butter, spread brown sugar and cinnamon.

Roll the dough into a round roll and slice.

Bake @ 325 - 350


Chunky Apple Muffins

1/4 cup Vegetable oil, 3/4 cup Brown Sugar, 1 egg, 1 Tablespoon cream, 1 1/2 cup chopped apple, 1 cup flour, 3/4 teaspoon soda, 1 teaspoon Baking powder, 1/4 teaspoon cinnamon.

BEAT all ingredients together with mixmaster

Spoon into muffin tin - sprinkle with topping - 1 tsp cinnamon and 1 1/2 Tablespoon W. Sugar,

BAKE 375 for 20 minutes


Lemon Bread -This is for you Marit

1/2 cup butter, 1 cup sugar, 2 eggs, 1/2 cup milk, 1 1/2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon salt, rind of 1 lemon.

GLAZE, juice of 1 lemon, 1/4 cup sugar.

DIRECTIONS In a large bowl, cream butter and sugar. Add eggs, one at a time, beating until creamy. Blend in milk. In another bowl, mix together flour, baking powder, salt and lemon rind. Pour into batter. Stir to moisten. Scrape into greased 9 x 5 inch loaf pan. Bake in 350f degree oven for 55 - 60 minutes. Cool in pan for 5 minutes. Remove to rack and while still hot, with a toothpick poke holes all over the top of the loaf, and spoon glaze evenly over. Cool.

DIRECTIONS FOR GLAZE Combine lemon juice and sugar in saucepan. Stir and heat till sugar is dissolved. Spoon evenly over the top of the loaf.


Oven Baked French Toast - for Christine

Day old French Bread - 1 inch thick 5 eggs 2 1/2 cups milk 1 cup Brown sugar divided (I don't usually use this much) 1/2 teaspoon vanilla 1 cup chopped pecans or walnuts 1/4 cup melted butter blueberries

1) arrange bread in greased 13 x 9 dish 2) in a bowl combine eggs,milk 3/4 b.sugar, vanilla and nutmeg 3) pour over bread - cover and refrigerate over night 4) in the A.M. combine butter & sugar & drizzle over the top. BAKE at 400 - 25 minutes Add blueberries and cook for another 10 minutes.
