Low Carb Carrot-Nut Muffins

INGREDIENTS Vegetable oil spray for muffing tin * 1 cup soya powder or sifted soy flour * 1 cup finely ground almonds * 1 1/4 cups granular sugar substitute * 2 teaspoons cinnamon * 1/2 teaspoon salt * 1/2 teaspoon baking powder * 1 cup vegetable oil * 4 eggs * 1 medium carrot, coarsely grated (1 cup loosely packed) * 2 teaspoons vanilla extract

DIRECTIONS 1. Preheat oven to 350F. Grease one 12-cup muffin tin; set aside. In a large bowl whisk together bake mix, ground almonds, sugar substitute, cinnamon, salt and baking powder. 2. In a medium bowl, whisk vegetable oil, eggs, carrot, and vanilla extract. Pour carrot mixture into soy mixture. Mix until just combined. Divide batter in muffin tins. 3. Bake 20-25 minutes until golden brown, and a cake tester inserted in centers comes out clean. Cool on wire rack.

Dominion Hearty Breakfast Baked Beans

This is super easy. It's all about the time in the cooker.

3 cups of dried white navy beans, soaked and simmered until tender. Soak overnight if you can for better product. Remove floaters and any debris that floats to the top.

1-3 cloves chopped garlic (depending on your taste) 1 1/2 c ketchup 1 1/2 c water 1/4 c molasses 1 large onion chopped 1 tablespoon dry mustard 1 tablespoon salt 6 slices of uncooked salt pork or bacon, diced. Used a 'double smoked' bacon for extra flavour 1 c brown sugar

Place all ingredients in slow cooker; cover and cook for 8 to 10 hours on low. Stir a few times, if possible.
