Ham and Cheese Bake

1 cup chopped green onion, 2/3 cup diced red pepper, 1 1/2 cups diced ham, 1 can of corn niblets drained, 3/4 cup shredded cheddar cheese, 1/2 cup cooking oil, 4 large eggs, fork beaten, 3/4 cup flour, 1 1/2 tsp baking powder, 1/4 tsp pepper,

Mix together the ham, onions, red peppers, and corn in a large bowl. Microwave for 5 minutes on high to soften veggies. To this bowl add in the cheese and set aside. Mix the oil and eggs together and add to the veggie mix. Combine the flour baking powder and pepper. Add to ham & veggie mixture, pour into a greased 9x9 pan. Spread evenly. Bake at 350 degrees for 40 minutes until top is golden and toothpick comes out clean. Serves 6.

Char's Bran Muffins

1 cup cooking oil, 4 eggs, 4 cups milk, 2 cups orange juice, 5 cups flour, 2 tsp salt, 5 tsp baking soda, 3 cups sugar, 6 cups bran flakes, 1 cup raisins,

In a very large bowl mix together the flour, bran flakes, sugar, raisins, baking soda and salt. Set aside. In another bowl add the eggs and oil and beat until frothy, add the milk and orange juice. Mix the two together and blend well. The batter will appear thin, but that's ok, it will thicken as it sits. Cover the bowl and refrigerate overnight. In the morning mix well again, then it's ready to start making muffins. This recipe will keep for up to one month in a plastic container with a tight lid in the fridge. Bake at 400 degrees for 25 minutes.

Day 1: - bacon, eggs, pan fried potatoes, fruit slices and toast OR ham and cheese bake with toast and fresh fruit OR corn flakes with toast and fruit slices. Day 2: - Eggs Benedict with pan fried potatoes, fresh fruit slices and toast, OR bacon, eggs, pan fried potatoes and toast, OR homemade muffins with fresh fruit. Day 3: - Cinnamon Raisin French Toast, with ham, pan fried potatoes and fresh fruit slices, OR bacon, eggs, pan fried potatoes and toast OR Fresh Fruit Bowl with toasted English Muffins. Day 4: - Blueberry Pancakes with sausage, fruit slices and maple syrup, OR bacon, eggs, pan fried potatoes, fruit and toast, OR Bagels and cream cheese with fresh fruit bowl. Every breakfast includes coffee, tea, orange juice and fresh homemade bran muffins or tea biscuits.
