Potato Frittata with Asparagus or Red Pepper

Frittata can be served with breakfast sausages or ham.

4 servings 1/2 cut up red pepper or equivalent amount of asparagus 2 potatoes 4 large eggs 2 tbs. grated Parmesan cheese 1 tbs. fresh parsley or basil 1/3 tsp. salt 1 tbs. olive oil 1/2 onion, thinly sliced 1 clove garlic (optional) 1 tbs. butter

Instructions: - boil and corsly cut up potatoes - whisk eggs, add cheese, parsley, salt, pepper - in oven proof skillet heat oil, add onion, red pepper (or asparagus)and cook until lightly golden. Add butter, potatoes and mix. Cook for 2 more minutes. - bake at 350F for 15-18 min. Let stand for 2 min. before serving.

Your choice of eggs can be served with breakfast sausages.


French Toast or Oatmeal Buttermilk Pancakes

French toast or Oatmeal pancakes can be served with breakfast sausages.

French Toast

4 servings 4 eggs 1/2 c milk 1/4 c brown sugar 2 tbs orange juice pinch of nutmeg and cinnamon 6 thick slices of raisin or whole wheat bread

Instructions - combine egs, milk, sugar, juice and spices - place bread in mixture for 5 min or overnight - cook on a hot grill on both sides until golden brown. - drizzle with warmed syrup or sprinkle idcing sugar on top and serve with fresh fruit.

Oatmeal Buttermilk Pancakes

4 servings 2 c oats 2 1/2 c buttermilk 2 eggs 1/4 cup melted butter 1/2 c whole wheat or white flour 2 tbs sugar 1 tsp baking soda 1 tsp baking powder 1/4 tsp salt

Instructions - combine the oats and buttermilk. Let stand for 1/2 hour or overnight. - add eggs and butter, mix well. - add the rest of the ingredients, let rise for ten minutes. - cook on medium hot grill. Use a 1/4 measuring cup.
